Healthy Tahini Cesar Dressing

I’m more of a vinaigrette kind of girl, but on certain salads, I do love a good caesar dressing. This tahini caesar dressing is a healthier version of everyone’s favorite creamy caesar dressing. We swap out the mayonnaise (eggs and oil) for tahini, which really gives this dressing a nutty earthy flavor coupled with a tang from the lemon juice. I love to pair this tahini caesar dressing with a tasty shrimp and chickpea kale salad.

If you don’t know what tahini is, it’s a paste made from toasted, ground sesame seeds and is popular in Middle Eastern cuisine. I will say, it depends on which brand of tahini you use in this recipe. I have used some brands that are a thicker consistency, so you will have to add more warm water or olive oil to thin it down to your preference. A Mediterranean market opened last year near me, so I just usually use their brand which tends to be thinner. You can easily adjust the amount of water and oil to get this dressing just how you like it.

In addition to mayonnaise, traditional caesar dressing also calls for anchovies – which we are going to sub out for capers and still maintain the tangy brininess of the anchovies. On top of axing the anchovies, if you simply eliminate the parmesan cheese you will be left with a nice vegan dressing option. We will then round off this salad dressing with a teaspoon of dijon mustard for a hint of sharp and spicy.

Ingredients
  

  • 1/4 cup tahini
  • 1 large lemon, juiced about 5 tablespoons
  • 2 clove garlic, minced
  • 2 tbsp olive oil
  • 3 -5 tbsp warm water
  • 1 tsp dijon mustard
  • 1 tsp capers, finely chopped
  • 3 tbsp parmesan cheese, grated
  • kosher salt, to taste

Instructions
 

  • Add all ingredients to a small glass bowl and whisk to combine.
